Set out bowls of berries, cooked bacon bits, and other tasty bits, then let everyone customize. Butter and syrup are classic toppings, but try jam, honey, nut butter, lemon juice, powdered sugar, whipped cream , or fresh fruit. Pancakes for one can be our little secret!

While the second side of the pancake cooks, put a wee pat of butter on your plate.

The recipe is easy. None of my pancakes burned just pretty golden brown. Amazingly delicious! They were amazing! So fluffy and lightly sweet! We both loved them! And I love how nice you are to them! Aww thanks Shea!! I made these this morning and I think that your flour ratio is incorrect. You call for 1 cup of flour but that yields a very flat pancake. When I added one more cup, they were just right. I find that the culprit when it comes to dense pancakes is often overmixing. Hope you have better luck next time! Thumbs up! And thank you again for voting for me!!! These turned out pretty good. I think it is important to note that I live in humid Costa Rica. My batter was a little runny so I added a little more flour to thicken it up and let it sit the 10 minutes in the fridge. The first pancake turned out a little too browned for my liking, so I wiped off the light coating of oil on the pan and cooked the rest without any oil. Thanks for commenting! Key here people, barely stir! I did maybe good turns and let it sit! I even used locally made flour which is a bit denser and they were still light! Blueberries will be added next time now that I know the basic recipe works so well. Thank you!!! One thing that might help for those having problems. FRESH stuff is the best.
